Beet Pesto

Try this with pasta or as a relish on a veggie burger.

Ingredients

1 cup red beets, chopped and roasted (about 1 medium beet)

3 cloves garlic, roughly chopped

½ cup raw slivered almonds or walnuts ½ cup olive oil 2 tablespoons red wine vinegar or lemon Salt to taste Minced fresh chives, for garnish

Directions

Place the garlic and almonds/walnuts in a food processor and pulse until the almonds are a fine meal and the garlic is minced. Add the beets, olive oil, and vinegar/lemon and pulse until you have a smooth pesto-like sauce. Season to taste with salt.
